What food would you say is your specialty?

For years, I have owned morning feeding. As a dad, this was my territory early in the morning when the kids arose for school, and more elaboratively on the weekend. Eggs were a great source of long lasting energy for the school bound. Even when I was a kid: I volunteered to take care of the chickens, brought in the eggs, and promptly figured out through experimentation that omelets were divine. I would substitute different cheeses, vegetables, and meats to discover new tastes, and actually love them all. Onions and spinach grew like crazy in our garden, and combined with ham and sharp cheddar, made my standard. One of my favorite memories in college was convincing three gals that omelettes were divine: my roommate traveled with me to their apartment one Saturday morning, fresh ingredients in hand, and we prepared our best for them. This was 1989, and the common thought was that eggs were not good for you, so they were omelette newbie’s – all from the big city. We converted them big time and there was no going back. Now, science has come back around and the egg stands alone as a whole food, natural, sustainable, and full of protein.

Later, I added waffles to the story and again found an amazing mix of whole grains that made awesome and flavorful breakfast wonders…. My kids loved them. But I would always long for that perfectly folded egg masterpiece, melted cheese pouring out, steam rising in the morning sun that would creep through the windows.

Now I’ve returned to the omelette with much joy and my wife has been the recipient of numerous breakfast in bed entrees that she, a true foodie, enjoys.

So, omelettes are my specialty and will always be my favorite morning food.
